my favorite is Spicy Beef Noodle Soup.  the most common one is (PHO) beef noodle soup.

Pho with chicken. It's vietnamese noodle soup with chicken.

I like Bun Thit Noung.  It's dry vermicelli noodles with broiled pork or beef with chopped lettuce, carrot, jacama, cilantro and maybe bean sprouts.  You pour a little nuoc mum in it to loosen up the noodles and give it some spiciness and salt.

I think of it as a vietnamese sandwich (banh mi) in a bowl, and it's something different than the typical pho.
