I always cook the same things ... homemade pizza, stuffed shells, baked pasta etc.

whats a new dish that i could try?

  1. Try artichokes stuffed with mint.

    6 artichokes

    3/4 cup bread crumbs

    4 tablespoons olive oil

    The leaves from a sprig or two of fresh mint

    Salt and pepper

    Prepare the artichokes, trimming them flat across the top, and boil them in lightly salted water for a few minutes; they should still be quite firm when you drain them.

    In the meantime mince the mint leaves and combine them with the bread crumbs and the oil.

    Preheat your oven to 300°F.

    Once the artichokes have cooled enough to be touchable, use your fingers to part the petals, so as to obtain wells. Fill the wells with the breadcrumb mixture. Scatter a few more mint leaves over the bottom of an oven dish, put the stuffed artichokes over them, and bake them for a half hour. Serve them quite hot.


  2. VEGETARIAN ITALIAN DISH  

    1 med. onion, chopped

    1 clove garlic, minced

    2 tbsp. olive oil

    1 lb. can vegeburger (1 lb. 3 oz.)

    2 (8 oz.) cans tomato sauce

    1 (6 oz.) cans tomato paste

    2 tsp. salt (watch -- use cautiously)

    1/2 tsp. oregano

    1/4 tsp. sweet basil

    1/4 tsp. rosemary

    2 c. cottage cheese

    1 egg, beaten

    1 (10 oz.) pkg. lasagna noodles, cooked & drained

    1/2 lb. sliced Jack or Mozzarella cheese

    1/2 c. grated Parmesan cheese

    Saute onion and garlic in oil until soft; add vegeburger (can be purchased at Health Food Store-Raley's). Add tomato sauce, paste and seasonings. Simmer 15 minutes.

    Combine cottage cheese, egg and spinach. Pam large baking dish (9 x 15 inches about) and spread alternately, tomato, beef mixture, noodles, sliced cheese and cottage cheese mixture and cover with Parmesan cheese. Bake at 350 degrees for 30 minutes. Serves 6 to 8 generously. (Divide tomato sauce mixture evenly between layers, putting a little on bottom of dish first.)

    VEGETARIAN ITALIAN PATTIES  

    3 eggs, beaten

    1 med. onion, chopped finely

    1 clove garlic, minced

    2/3 c. cheese, grated

    4 slices whole wheat toast, broken

    1/4 c. quick oats

    1/2 c. nuts, finely chopped

    1/2 tsp. salt

    1 can tomato soup & 1 can water

    Mix well and form into small flattened balls. Saute slowly, OR place balls on greased cookie sheet and flatten with greased glass dipped in corn meal. Bake at 350 degrees for 15 minutes. After baking or sauteing put patties into a baking dish and add diluted tomato soup. Bake at 300 degrees for 30 minutes.

    VEGETARIAN ITALIAN VEGETABLE SOUP  

    1ST LIST:

    3 (46 oz.) cans tomato juice

    6 stalks celery

    1 green pepper

    1 red pepper

    2-3 med. onions, diced

    6 carrots

    3 cloves garlic (peeled and diced)

    1 bay leaf

    1 tsp. of each of the following: oregano (dried), sweet basil (dried),

    Italian seasoning (dried)

    2 tsp. dried parsley

    2ND LIST:

    2 (16 oz.) cans tomatoes (smashed)

    1 (16 oz.) can stewed tomatoes

    16 oz. bag frozen broccoli cuts

    1 stalk fresh broccoli

    1/2 head fresh cauliflower

    1 (16 oz.) bag spinach (cut)

    2 med. zucchini (chunked)

    Using an 8 quart pot or larger, place all ingredients in 1st list and allow to simmer 45 minutes.

    Add broccoli stumps (from fresh) and slice cauliflower. Cook another 20 minutes.

    Add broccoli flowers, spinach and zucchini. Cook another 15 minutes. Serve with Parmesan cheese and crusty bread. Serves 17-18.

  3. Instead of meat, use mozzarella cheese and peppers with pasta-YUMMY!

  4. Fry some eggplants, layer with cheese and pasta or pizza sauce. Bake.

    When anyone asks what it is, say "Melanzane" and leave them impressed.

  5. Traditional Italian cookery is actually mainly vegetarian, although today even in Italy cooks (both professionals and at home) tend to add any kind of meat or fish to every meal...

    I personally like farinata di ceci, which is also easy to do (just remember like for a true Italian pizza it must be thick, not thin :) and can be served along with a lot of other kind of food; for instance, a simple dish may consist of a slice of farinata along with a handful of peas.
