  1. Most of the shampoos on the market are going to be closer to the 7 range.  You will find some that are more alkaline, but they are rare.

You can get pH papers at the drugstore, and they are very helpful to have.  Use them to test any and everything!

Try baby shampoo -- it used to be quite alkaline (it's not mild, as many people think).  Some of the herbal essence shampoos were high, as were dandruff shampoos.  They may have altered their formulas somewhat because people want "pH balanced" products, but they may still be higher than most.

Try looking for some "natural" shampoos made with soap, such as castile.  You can also make some shampoo out of handmade soap.

You can always use dish detergent as well.  That is usually a higher alkaline product.  I know I've used Dawn for cutting through heavy greasy wool, and it's very effective.  Or Orvus paste, if you can find it.
