I found out that marshmallows are made of animal gelatin and sugar. I would like to find out what is animal gelatin.

It is the gelatinous material extracted from bone and cartilage after long cooking.  Have you ever make your own chicken broth using the whole chicken, and when it cools, it gets like jelly?  Thats the exact same thing.  Jello is also from this product.
