Whats better ABEC-1 or ABEC-5?

In theory, higher is better.

However, you can have an ABEC 5 bearing in one brand that is much lower quality than an ABEC 1 in another brand.  Some top end brands have unrated bearings as the top of their lines (Zero Drag, Bones, Twin Cam).

The ABEC ratings are for vibration in high speed machines like lathes or routers.  You can't skate fast enough to be into the speeds of even ABEC 1.

abec 5 is better- the higher the abec the better although i would highly recomend reds bearings
