Question:

Whats for dinner vegetarians????

i'm bored at work and trying to decide what i want for dinner lol any ideas? relatively simple would be nice :) i could go food shopping if i have too, but no crazy ingredients please. no eggs. soy milk, cheese, and "fake" meats are ok.

  1. I'm probably having veg-tacos.  (I prefer to use morningstar farms grillers crumbles--They're vegan)

    It's a great way for my hubs and I too have something we both love (he's a meat-head), at the same time, which doesn't always happen!

    They always hit the spot too!

  3. Tofu scramble!

    Ingredients:

    1/2 yellow onion, diced

    1/2 green bell pepper, diced

    1 block tofu, drained and pressed

    2 tbsp oil or earth balance "butter"

    1 tsp garlic powder

    1 tsp onion powder

    1/2 tsp dried parsley

    1 tbsp soy sauce

    2 tbsp nutritional yeast

    1/2 tsp turmeric (optional)

    Preparation:

    Slice the tofu into approximately one inch cubes. Then, using either your hands or a fork, crumble it slightly.

    Sautee onion, pepper and crumbled tofu in oil for 3-5 minutes, stirring often. Add remaining ingredients, reduce heat to medium and allow to cook 5-7 more minutes, stirring frequently and adding more oil if needed.

    Wrap in a warmed flour tortilla with a bit of salsa for a breakfast burrito.

  5. My mom makes a delicous vegetarian mac&cheese using soy cheese, brown rice pasta and soymilk. You let the pan heat up for about 5 minutes and then add some milk. Let it sit for about 4 minutes. Add 1 to 1 1/2 handfuls of cheese. The mexican blend from trader joes work delightfuly. Let it melt and then add brown rice pasta or regular pasta. EIther one works. Mix it. If you would like,  pour the finished mac 'n' cheese into an alluminum pan and sprinkle cheese on top. then toast in the toaster oven for about 5 minutes.

  6. If you like Quorn brand,  try a breaded foux chicken filet. Bake that with maranara sauce and mozzerella cheese. Add spaghetti and BAM, a foux chicken parmasana.

    Also, morningstar fake meat crumbles mixed with sloppy joe mix are also good.

    My veggie grandmother taught me this one, when I don't feel good, she take stewed tomatoes and water. puts it on medium-high heat and adds raman noodles ( I toss the seasoning pack into the garbage). She cooks that till the noodles are tender. Once it is in a bowl, she adds some mozzerella cheese.
