  1. Although it's certainly not across the board but there's many Chinese dishes & cooking methods that produce food that's easily digested, hence a source of good nutrition for kids, elderly, convalescent and those with weakened body systems & stomachs. Examples are congee (even more easily digested than rice), soups (the essence of nutrients & goodness of various ingredients all in the soup after hours of cooking), steamed fish, steamed or braised tofu, stewed dishes, stir-frys (where meat is not allowed to overcook to become tough & veggies still retain lots of nutrients) etc.

    Contrary to many Westerners' belief, most authentic Chinese dishes are not deep-fried (which doesn't help digestion) but steamed, boiled, braised, stewed or stir-fried. So the end result is tender & moist food that doesn't require much chewing and becomes easily digested with more nutrients absorbed into the body. The use of very fresh ingredients also helps. The Chinese also believe in drinking Chinese tea with their meals to aid digestion.


  2. The high veggie content... most Chinese dishes are essentially stir-frys with less meat and more veggies than a typical meat and potatoes meal.  Veggies digest quickly.

  3. The balance of the food. Chinese eat lots of different vegetables, and lean meat and fish, foods that are very healthy for you. They include a very balanced food groups meal.
