Whats the best karate school / academy in AZ?

You try ATA academy they teach karate and they are very efficient in their teachings.

If you are in the east valley you should go to one of the "America's Best Karate" schools.  I don't know the phone number for all of them but, the one in Chandler is (480) 961-KICK.  Not to be too critical of the other answer I saw but, the ATA is fun but, the martial arts quality is poor.  I have seen their black belts and they couldn't beat an orange belt from America's Best.  It just depend on what you want.  Good luck.
