Whats the best way to freeze corn on the cob?

I have about 100 ears of corn that i know i wont eat before its rotten... what is the best way to ensure freshness of the corn if i want to freeze it?

Do i need to blanch then, or just freeze em? husk on or off?

  1. i say husk off  and freeze in a vacuum sealed bag !


  2. I've done this for years and tried ti withouth.

    Shuck it, desilk it, blanch it, drop it in ice bath to completely cool, then put in zip loc bags. If it's not completely cool it will sweat in the bag before it freezes! The shucking and silking take the longest.

    You will waist your beautiful corn if you do not blanch it!!!!! I had to throw the corn out it wasn't fit to eat!!!  The blanchin kills certain live enzymes that will ruin your food in the freezer.. Don't skip it.........

    After your corn in cleaned, bring a big pot oof cold water to a boil with lil salt. When its boiling drop the corn in, let it return to boil n stay in there for about 3 min. Immediatley dip the corn out n drop it into an ice chest of ice water....Lots of ice it will melt with all that corn..Repeat till your corn is done. Lay completely cold corn on a towel to drain. Then put your ears into big ziploc bags then pop int the freezer. Not all that hard n the lil bit of trouble is worth it!!! Do most of your garden veggies the same way to preserve them longer and for maximum flavor!

  4. Here is how I do it. Take off the husk, blanch it, after it has cooled somewhat, cut it off the cob and put in freezer bag.

    This way you can use it many different ways, soups, fried corn, etc.

Husk, de-silk with brush under running water, blanch in boiling water for about 8 minutes, take out and put in ice water for about 8 minutes, lay the cobs on a big bath towel on the counter, rotate to dry the corn, pack in zip loc bags, squeeze out air, put drinking straw in corner of bag as you seal it while sucking the air out of the zip lock bag.  Freeze.  This is the way I just froze about 100 ears of corn as well!  I froze corn last year without blanching it and the corn takes on the taste of the cob and we do not enjoy it.  When you blanch it, it stops the enzymatic process and the taste will be much better.  I also cut corn off the cob but did not blanch it as the cob is gone and the taste of it won't linger.  Hope this helps!  I use the zip loc/drinking straw method on all my fresh veggies as well including corn that has not been cooked yet and refrigerated.  PS Drying the corn on the bath towels prevents ice crystals from forming and causing freezer burn.

  6. you could blance them and let them cool. Wrap in saran wrap and place in a freezer zipper bag. they should stay fresh for a long time and fast to cook caused you blanched first.
