Signifcantly less than the chances of being killed taking a bath or shower in your own home or being killed falling out of bed.  The odds of a ship sinking are slim and the odds of being killed in such a sinking are even less.

I have been on a carnival cruise .... they dont sink.

Will you die? Depends how much of the free food you eat !

The odds are prob. pretty d**n high.  Worst thing I have heard about in the last years are

1)  Ship ran aground and everyone got off

2)  Food poisoning

3)  Fire

and about 20 years ago

4)  Pirates.  They shot some guy in a wheelchair and tossed him overboard ..

but I dont think they have sunk yet
