Whats the coarse stuff on the outside of muffins?

not cake muffins, or the big smooth ones, but the round flat ones - are they breakfast muffins? the stuff is like a coarse flour - look and texture like parmasan but not as smelly. Thanks!

  2. sometimes rice flour is used to make the bread really crunchy. Otherwise it's usually just plain white bread flour

  3. It is semolina flour.

  4. They either use polenta flour

    or semolina flour.

  5. Is it pin oats?

    I found something else out, that it sometimes is dusted with breadcrumbs and sometimes cornmeal.  You learn something every day!

  6. I think you're talking about what we in the USA call English Muffins so it's our cornmeal on the bottoms.  Thomas' is the best known brand, so I've given you a link to them below.
