Extra virgin olive oil comes from the first cold press of the olive. It's the highest quality in taste and texture. Virgin oil is the next pure, and cannot contain any refined oil. The last would be just the oil from olives, and may contain refined oil. It's the lowest grade, and more bland tasting than the other higher quality oils.
