Whats the difference between American italian food vs food in Italy?

Im an Italian American who has lived in both countries for some time now.  There definately is a difference between commercialized Italian-American food (es:  Olive Garden, Carabba's, etc.) that is no where in comparison to any type of food you would get in Italy.  I've only been to Olive Garden once (my mom would kill me if she knew) but the food isn't as fresh, they pile on the sauce so its too much, and they use too many spices that shouldnt be used in the dishes.  Thats just my generalized opinion, many people do like it.  Carabbas is a step better, but it's not "authentic" Italian.  The Italian-American food I am used to is from "real" Italians.  I only go to restaurants where the owners are actually from Italy and speak Italian.  That food is different, as the mainstream of Italian-Americans are primarily from southern Italy, therefore it is a more typical southern cuisine.  However, it is a "real" Italian type of food.  However, they still need to keep with American customs and pile the food on the plates where serving size is about 3x the normal.  Also sauce is loaded on the macaroni, rather than just a sufficient amount.  

    In Italy, the food is always fresh and that helps with the taste.  Also things seem to be more lighter, and portions are obviously less.  Everyone knows exactly what is the right way to cook things, and the food is just amazing.  

    I like both, it just depends on your area.  New England, specifically Connecticut and New York have the best "real" Italian-American food, in my opinion.  Thats jus what I think, hope it helps.

  3. Food in Italy is actually food, grown and made by real people. Food in America is processed, genetically modified, highly emulsified sludge, flavoured with the bodily fluids of factory workers. (America has been using completely unregulated genetically modified food for 10yrs, growth hormones, drugs, and antibiotics in livestock for over 40yrs)

    Real Italian food (which happens to be my favourite) has a subtlety, simplicity, and deliciousness that's healthy and rich at the same time. Especially the simple country meat dishes. You haven't lived until you've tasted Ossobuco di Cinghiale made with wild boar.

  6. Huge difference, I am an Italian living in the US and I am often surprised by what here is called "Italian food".

    I find Italian food in US to be too fat and covered with too much cheese. The Italian diet is one of the healthiest ones, I am talking about the true Italian diet. Fresh ingredients and simple recipes.

    I personally prefer to cook my own food than eat something which doesn't even taste like the real thing.

  10. Americans have a problem with patience.  I've seen that in their Mexican food.  The same can be said of their German, Chinese, Japanese, etc. types of food.  One would assume Italian is the same way.

    They get tired of waiting for it to cook properly and always develop fast food ways of cooking things.  It tastes good to Americans who very rarely taste the original; but if they tasted other cultures' foods in their home country, they would see how much of a poor substitute our food is on taste.

    Americans do a lot of great things, but give us other people's things and it goes all to h*ll.
