  1. Oddly enough, whats seems to be a simple question isn't so simple.

    Real Brie vs Real Camembert.

    Camembert is one of 3 famous cheeses from Normandy. The other 2 are:

    Pont' L' Eveque and

    Liverot.

    Camembert( real) only comes in one size( that being an 8oz round box) It MUST have the word Normandy and the label or it isn't authentic. The wanna be Camemberts ( not real)

    taste exactly like brie and you'll see that same company with an 8oz. Brie( the wrong size for real brie) with a different colored label which is the same cheese.

    One such company that does this is Claudel( and many supermarket brands).

    So, same cheese, different box( blue label, red label).

    Real Brie comes in a 6 lb. wheel and the finest is Brie D'Meaux or Brie Mullen( Both earned the AOC denomination and are the only 2 Bries to have earned it).

    Some decent brands ie Corronne( Henry Hutin) come in a 1K size also but are much milder( whiter rind) and minus the earthy notes.

    With these you would see a huge difference.

    Because where talking about two of the real deals here, they are similar.

    Mushroomy, earthy fragrance, slightly bitter aftertaste, slight ammoniated odor when ripe and ready to eat.

    Chatelin is a great Camembert.

    So if you had a piece of Meaux and Chatelin at the same peak of ripeness, you find them quite similar and sometimes hard to tell the difference.

    With any combo of the other Bries mentioned, the difference would be HUGE.

    Like comparing Philly cream cheese with Parmigiano Reggiano.

    Always look for Origin on a Camembert box. ( Must be Normandy).

    Always feel the top of the cheese by pressing you thumb slightly in the center( close one eye a touch you eyelid and it should have that same feel). it should not be caved in or have a have a hard edge ( then it's over the hill).

    The rind should be slighly brown and not snow white( as with the fakes).

  2. They smell different (Camembert smells stronger than Brie) and they taste different. I prefer Camembert, because it has a more definite taste and you can melt it too!

  4. Camembert should be made with Penicillium camemberti and brie with P. camemberti ,Brevibacterium linens and some other micro-organisms. So Brie should have more flavour and faster flavour development than camembert, but these days many factories just use P. camemberti for both.
