Brandy as with many spirits is distilled and then aged in wooden oak casks, the aging process gives it its distinctive color.  the longer the brandie ages the smoother it tastes.  

The usual coding is;

VO for Very Old

VSOP for Very Superior Old Pale

and

X.O. for Extra Old.

These are not set standards, a VO for a good brand like Remy Martin may be better than a cheaper brands VSOP.
