Vegetarians have a diet based on vegetables whilst leaving out meat for several reasons such as low tolerance for digestion to meat proteins to caring about animals. Vegans as I understand it are solely vegetarians as a stance against animal cruelty and the belief that we do not need to consume animals. Some vegetarians may drink milk or wear level. A vegan would not. Anything that is taken from a animal is avoided by them!

Vegetarians don't eat dead animals.  This means no meat and no slaughter byproducts.  Each vegetarian makes his or her own call on foods from living animals.

Vegans don't eat, use, wear, purchase or otherwise consume anything of animal origin whatsoever (to the extent that such a thing is possible) regardless of whether an animal died for it.  This means no meat, no slaughter byproducts, no dairy foods, no eggs, no honey, no leather, suede, wool, silk, fur, down, feathers or pearls.  It also means sourcing makeup, toiletries, etc that are made without animal ingredients and without animal testing.  Vegans don't support industries that exploit animals for entertainment, such as circuses or rodeos.

Vegetarianism *may* be just a dietary choice, although vegetarians may opt to exclude things like leather, for example.  Veganism, by definition, extends beyond diet.

Vegetarians have made a decision not to eat meat as a rule. There are several kinds of vegetarians- some still eat fish, for example, as its not a red meat.

Vegans, however, don't eat any kind of meat whatsoever, but take it to the next level- they don't consume animal byproducts either. They don't have things like milk, cheese, (any dairy), eggs, gelatin, etc. True vegans also do not wear animal products- no fur, no leather.
