    I've worked at a few restaurants and they all have a stock pot that will be emptied and cleaned 2-3 times a week (maybe less), the stock is usually made from pork bones but one place where I worked would cook a turkey in the stock pot and use the turkey as chicken for the fried rice.

    So the sauce is made almost always from meat stock. If you are vegetarian you can request no meat stock in your dish and they can use tap water to cook it, but sometimes we forget because it's a force of habit to reach for the stock pot to add water.
