  1. This is not easy.  I bet she will not even eat it.   Cook what you know best.

Make a very hot pepper sauce.  The hottter the better.  Mix it with habernero, fresh garlic, scallions, ginger.

    Plan B

Cook a rice soup with duck

dipping sauce is ginger, scallions fish sauce

    Remember your #1 hot pepper.

Always have a fresh pepper tree in your garden and also mints like cinnamon basil.

  2. Ingredients:

2 pounds boneless chicken pieces, skinned

    1 egg

    1 1/2 teaspoon salt

    White pepper

    1/4 cup flour

    1 tablespoon minced ginger root

    1 teaspoon minced garlic

1 dash crushed hot red chilies

    1/4 cup chopped green onions

    1 tablespoon rice wine

    1/4 cup water

    1 teaspoon sesame oil

    ***Orange Chicken Sauce***

    1 1/2 tablespoon soy sauce

    1 1/2 tablespoon water

    5 tablespoons sugar

    5 tablespoons white vinegar

Cut chicken pieces into 2-inch squares and place in large bowl. Stir in egg, salt, pepper and 1 tablespoon oil and mix well. Stir cornstarch and flour together. Add chicken pieces, stirring to coat. Heat oil for deep-frying in wok or deep-fryer to 375 degrees. Add chicken pieces, small batch at time, and fry 3 to 4 minutes or until golden and crisp. (Do not overcook or chicken will be tough.) Remove chicken from oil with slotted spoon and drain on paper towels. Set aside. Clean wok and heat 15 seconds over high heat. Add 1 tablespoon oil. Add ginger and garlic and stir-fry until fragrant. Add and stir-fry crushed chilies and green onions. Add rice wine and stir 3 seconds. Add Orange Sauce and bring to boil. Add cooked chicken, stirring until well mixed. Stir water into remaining 1 tablespoon cornstarch until smooth. Add to chicken and heat until sauce is thickened. Stir in 1 tablespoon oil and sesame oil. Serve at once. You may want to add grated zest of 1 orange to the sauce ! for flavor.

  4. ASIAN ORANGE CHICKEN

    INGREDIENTS

    Sauce:

    1 1/2 cups water

    2 tablespoons orange juice

    1/4 cup lemon juice

    1/3 cup rice vinegar

    2 1/2 tablespoons soy sauce

    1 tablespoon grated orange zest

    1 cup packed brown sugar

1/2 teaspoon minced fresh ginger root

    1/2 teaspoon minced garlic

    2 tablespoons chopped green onion

    1/4 teaspoon red pepper flakes

    3 tablespoons cornstarch

    2 tablespoons water

    Chicken:

2 boneless, skinless chicken b*****s, cut into 1/2 inch pieces

    1 cup all-purpose flour

    1/4 teaspoon salt

    1/4 teaspoon pepper

    3 tablespoons olive oil

    DIRECTIONS

Pour into saucepan 1 1/2 cups water, orange juice, lemon juice, rice vinegar, and soy sauce; and set over medium-high heat. Stir in orange zest, brown sugar, ginger, garlic, and chopped onion. Bring to a boil. Remove from heat, and let cool 10 to 15 minutes.

Place chicken pieces into a resealable plastic bag. When contents of saucepan have cooled, pour 1 cup of sauce into bag. Reserve remaining sauce. Seal bag, and refrigerate at least 2 hours.

In another resealable plastic bag, mix the flour, salt, and pepper. Add marinated chicken pieces, and shake to coat.

Heat the oil in a large skillet over medium heat. Place chicken in skillet, and brown on both sides. Remove to paper towels, and cover with aluminum foil.

Wipe out the skillet, and add the sauce. Bring to a boil over medium-high heat. Mix together cornstarch and 2 tablespoons water, and stir into sauce. Reduce heat to medium low; stir in chicken pieces, and simmer, about 5 minutes, stirring occasionally.

FYI - It's not that tough.

  6. You've got a couple of different recipes there. I'll tell you what I do. I just add grated orange zest or a few drops of sweet orange oil to any recipe. Yum. It's like cheating, but it's awfully good.
