Whats your favorite meal?

so I'm going on a vegetarian diet and i want to know what delicious things you guys have done for those kinds of things so that its not just salads or something boring

so if any of you are vigitarians and have a favorite thing to eat please let me know what it is and how you make it.

like what you put in it and if i have to cook it how long what temperature

stuff like that

  2. I'm not vegetarian but there are some days I don't feel like eating any meat and on those days I'll make me some potato or spicy lentil or bread soup.

    Here's the recipes for all:

    Potato Soup:

    Put 4 medium peeled and cubed potatoes into a saucepan and cover w/ water.  Bring to a boil.  Sautee 1/2 a large onion in oil till brown.  When potatoes are soft, dump out almost all the cooking water except for a couple of inches.  Add in the onions.  Set aside some of the potatoes and onions.  Blend the remaining potatoes and onions in a blender.  Add water or soymilk as needed for desired soup-like consistency.  Mash the potatoes and onion you set aside just a little and add them back to the soup pot.  Stir.  Season with salt and pepper to taste.

    Spicy Lentil Soup: warning this is super hot and spicy so if you don't like really hot spicy food, then just skip this recipe.

    Boil lentils ( I never measure with this one, I think it's probably a cup or a little less of lentils) in plenty water till tender.   In a blender add 2 raw tomatoes and 2-3 raw jalapenos with a small chunk of a really small onion, I'd say I only add in 1/3rd of a really small onion).  Puree.  If too thick to puree you can add in a splash of warm water.  When all pureed well, pour into the cooked lentils.  Stir to incorporate then season with salt and pepper to taste.  Let all this come to a simmer for 5 minutes then turn off the heat.  Serve with saltines.

    Bread Soup ( I really enjoy this one):

    In a large stock pot add in 8 cups cold water, then add in 2 chopped tomatoes, 1 diced onion, 2 medium zucchinis, sliced, 1 pound cubed potatoes, 8 ounces fresh green beans each broken in half, 2 tblsps salt, 1 clove of minced garlic, black pepper to taste and 1 tsp of red chili flakes.  Stir well.  Now add in a handfull of each: parsley, basil, mint, thyme and arrugula.  Bring to a boil, then reduce heat and let simmer covered for 25-30 minutes.  Add in torn bread cubes.  Stir and let boil 10 minutes.  Serve in big soup bowls and if you like garnish tops of each with another handfull of herbs, some chili flakes and drizzle with extra virgin olive oil.

  3. I like having pasta with a tomato or a cheese sauce. I just get frozen meals and heat em up in the microwave. ^^

  4. Vegetable Lasagna

    1 eggplant peeled, sliced and salted for 1 hour- Drain, rinse and lightly saute in olive oil.  

    2 zucchini sliced

    1c broccoli florets

    1 carrot grated

    2 handfuls Spinach or swiss chard

    80 grams spinach lasagna pieces or 2 potatoes sliced

    2 oz goat cheese and 1/2 c mozzarella and freshly grated Parmesan cheese

    1/4 c chopped parsley

    1/4 c chopped basil

    2 cups fresh Tomato sauce

    1.) Place small amount of sauce on bottom of pan.  

    2.) Layer Pasta sheets or potato on top.  

    3.) Layer with Eggplant, and rest of vegetables.

    4.) Add cheese and herbs and tomato sauce.

    5.) Repeat.  Finish with rest of tomato sauce, grated Parmesan cheese and parsley

    6.) Bake @ 190'c/375'f for 30 minutes until bubbly.

    Also a favourite item for me is baked fish.  Brush fish with oil, s+p and bake until cooked.  Serve with sweet mashed potatoes and grilled veggies.

Mmmm one of my favs... vegetarian sloppy joe's.  Esp when you're craving some comfort food.  Morning star farms makes a good "Meat Crumbles"  usually found in the frozen foods in a bag but also found in some produce sections where other vegetarian items maybe found as well, and 1 can of manwich and hamburger buns.  Simple enough, takes all of 10mins to cook, really!  I throw a little (like 1-2 Tb) olive oil in sautee pan, add meat until thawed, keep an eye on it, doesn't take much and then add the manwich let simmer on Medium heat for about 7-8mins.  Scoop onto bun and enjoy!
