"May It Be" by Enya (from the first LOTR movie)

"Conquest Of Paradise" by Vangelis (from "1492 -Conquest of Paradise")

"To Still My Mind" by Karl Jenkins (from "River Queen")

All these are greatly unique, melodic and very memorable pieces indeed!
