    Chopped lettuce

    Chopped scallions

    Chopped onions

    Diced tomatos

    Salsa

    Tofutti brand Better than Sour Cream

    1 bag recipe crumbles (fake hamburger), Morningstar Farms or Green Giant brand.

    1 packet taco seasoning

    1 bag Tostitos

    Cheese (optional for the Meat Eaters)

    Lay out everything, buffet-style. Heat up the recipe crumbles in a skillet with a little water, add the taco seasoning.

  4. I make a great salad:

    about 1/3 head iceberg lettuce or 6-8 romaine leaves

    1/3 - 1/2 green pepper

    1/3 sweet red pepper

    1-2 pickling cucumbers cut lengthwise and segmented

    12 kalamata olives

    1/2 avocado, sliced

    2 scallions, cut fine

    2-4 radishes, sliced

    1-3 tomatoes, sliced

    Assemble all but tomato, then add

    1-2 tsp salt

    fresh ground black pepper to taste

    large pinch tarragon

    2-3 cloves garlic, crushed

    3 Tbsp wine vinegar

    2 Tbsp olive oil

    Toss thoroughly and then put sliced tomatoes on top; salt lightly.

    Sometimes I add crumbled blue cheese.

    Then comes the main course.

  6. check out vegweb.com it's the best resource and most of the non-baked goods are totally safe for being tasty. The baked goods are just hit or miss because veganbaking is so tough. I like the "trailmix cookies" though.

    my girlfriend also stirfries (morningstar) chicken strips  with curry ingredients(rice, peas,potatoes.....etc) with yellow curry powder and coconut oil and soy sauce and makes the best vegan curry ever.

    I find that  any meat recepie but with vegan ingrediants using morning star strips as the meat stirfried is delicious. I have made all sorts of great stuff. Asian foods are the best made vegan like a lowmein or ramen or rice with vegan meat.

    Plain old spaghetti is also possible with "trader joes  meatless meat-balls" those are great.

    here are some recepies i like and 2 baked goods

    Katie's Joyful Chik'n Sammich

    Ingredients (use vegan versions):

        1 frozen Chik'n patty [http://www.bocaburger.com/product_meatle...

        sea salt and pepper to taste

        Dijon mustard

        vegan mayonnaise to taste [http://www.misomayo.com/]

        1/2 avocado

        1 teaspoon onion powder

        1 leaf butter lettuce or heart of romaine

        1 handful onion and alfalfa sprouts

        1 small tomato, sliced

        two slices vegan bread

        optional:

        olive oil to make patty crispier

    Directions:

    Now when I make this I use no measurements, so these are just guidelines.  All ingredients are pretty much to taste!

    First, begin to cook patty in shallow pan or skillet.  Add olive oil to each side if you so desire.  Add sea salt and pepper. Flip it occasionally as you construct your sammich.  [Note: DON'T USE THE "ALL NATURAL" BOCA VARIETY OR MORNINGSTAR FARMS.  They aren't vegan!]

    As your patty is cooking, spread Dijon mustard, and vegan mayo.  Miso Mayo is my favorite, especially the Garlic n Dill Flavor... mmmmmm.  Sprinkle onion power and whatever other spices you would like on the same slice.

    When your patty is warm throughout and the breading is crispy [about 12 minutes], add it to the other slice of bread.  Top it with your lettuce, sprouts, and sliced tomato.  Then stick it together, slice it in half and experience the joy of sammich.

    Serves: 1

    Preparation time: >15 minutes

  8. Here they are:

    Vegan Breaded, Fried, Softly Spiced Tofu

    1 (16 ounce) package extra-firm tofu, drained and pressed

    1 1/2 cups vegetable broth or stir fry mix

    3 tablespoons vegetable oil

    1/2 cup all-purpose flour

    1 tbsp vegan marinade powder mix

    1 teaspoon salt

    1/2 teaspoon freshly ground black pepper

    Cut pressed tofu into 1/2-inch thick slices; then cut again into 1/2-inch wide sticks.

    Place tofu in a pan, and pour broth or stir fry mix that was dissolved in 1 ½ cup water over the top. Simmer for 10 minutes.

    In a separate bowl, stir together flour, salt, pepper and marinade powder mix.

    Warm oil in a large skillet over medium-high heat.

    Let tofu get warm until you can tolerate the heat when you touch it, and squeeze most (but not all) of the liquid from them or just tissue the liquid from it.

    Roll sticks in breading. (You may have to roll sticks twice to end up with a fairly dry outer layer of breading.)

    Place tofu in hot oil; fry until crisp and browned on all sides. Add more oil if necessary.

    Vegan Crème Au Café (Vegan Coffee Blanc-Mange)

    ½ cup soymilk

    ¼ cup strong coffee cold

    1 2/3 tbsp cornstarch

    1 2/3 tbsp coldwater

    1 2/3 tbsp organic sugar

    1/3 tsp vanilla extract

    1/3 pinch salt

    1. In a pot over medium-low heat, put the soymilk, the coffee, the sugar and the pinch of salt.

    2. In a small bowl, whisk the cornstarch with the cold water. Add to the pot.

    3. Cook, stirring constantly for 15 to 20 minutes.

    Vegan Sloppy Joes

    • 1/4 tablespoon oil

    • 1/4 cup coarsely chopped onion

    • 1/2 medium green bell pepper, coarsely chopped

    • 3/8 cup water

    • 4 ounces can tomato sauce

    • 1/4 tbsp chili powder (more to taste)

    • ¼ tbsp other available spices (depends on your taste)

    • ¼ tbsp black pepper

    • 1/2 tablespoon organic sugar

    • ¼ tsp crushed garlic

    • 3/8 cup dry textured vegetable protein (TVP) beef type

    Heat the oil and sauté the onions, pepper and garlic for 5 minutes. Add the remaining ingredients and simmer for 20 minutes. Serve over vegan rolls and breads.

    Pipin’ Hot Bakery Whole Wheat Tortillas

    ½ cup whole wheat flour

    ¼ tsp salt

    ¼ tsp baking powder

    1 tbsp canola oil

    ¼ cup water

    Combine flour, baking powder and salt.

    Stir in the oil and water all at once, using mixer or a fork, and toss quickly.

    When dough can be gathered into a soft mass, turn onto floured surface and knead a few times.

    Form 2 balls of dough, dredge in flour, and store in a plastic bag to prevent drying until ready to be used.

    Flatten first ball of dough into a disk.

    Roll out dough on floured surface until 7 inches or larger with even strokes that do not reach to the edge, turning over frequently.

    Place tortilla in ungreased, frying pan that has been preheated to medium-high heat.

    Cook 30-40 seconds on one side, turn over with spatula and cook 30-40 seconds on other side., First side should be pale and sprinkled with brown spots and the other side will be blotched.

    Serves 2
