It's a durability issue.  A one piece crank is a single piece of high tensile steel or cro-mo steel that is shaped into an "S".  If you're jumping or riding hard it is very easy to bend the cranks.  By installing a three piece crank you can distirbute the weight of the rider throughout the crankset.  Also, three piece cranks usually have better quality bearings.  Try to get sealed bearings if possible, I have seen some really cheap loose bearings on some crank sets.
