Question:

When I make fresh french fries in my deep fryer the outside is brown, but the fries are limp.

Is temp. too high. I cut my fries to 1/4" to 3/8" thick. I use veg. oil in a deep fryer set at 375 degrees.

I need my fat and salt.........

  1. I would suggest a bit lower temp and fry only a few at a time and for a bit longer.  Also, maybe cutting them thinner might help because I bet the ends or pointy parts are nice and crisp, right?

  3. lisa is right but the best way is to cook them at different temps. the first time cook at like 250 then cook them at normal frying temp 375.

  4. i am not sure , as long as oil is very hot usually about 350 degrees in restaurant they should get crispy  

  5. I actually fry mine twice.  The first time seems to cook the center and the second time around crisps them up.
