When I watch a French cooking show on tv, why do the chefs usually handle the foods with their bare hands?

  3. It's hard to cook FAST with gloves, normally people at home don't cook with gloves and....

    Palmar sweat adds to the taste!

  4. Because if you wear plastic gloves over a naked flame they have a tendency to melt. Bad for the skin, worse for the taste of the food. Clean hands are better.

  5. Because that's how most people cook whether at home, in restaurants and cafes.  I've never seen a chef/cook wearing gloves at work.

Remember, it's TV.  Most at-home cooks also do not wear the plastic gloves either.  The food they are preparing is rarely served to anyone, the finished dish they present was usually done earlier, and that is the one they offer samples from if they offer any.  Yes, they do wash their hands, and most of them use an antibacterial soap, but television shows have a way of editing what is considered distracting or superfluous out.
