why is it so that when pouring an alcoholic drink if you tip the glass sideways it doesn't fizz up or get a head?

  3. less air gets in between the alcohol and the cup....

  4. I'm assuming you mean a beer, but you did answer your own question. It is to prevent air from mixing with the liquid causing head.

  5. when you pour it in at an angle and slowly, the carbonated (or nitrogenated) beverage enters the glass smoothly and therefore does not allow whatever gas is trapped in the liquid to escape rapidly and cause a lot of foaming or a head in the process

  6. Don't bartenders tip the glass when they make multi-colored layered drinks too?  Maybe it's the same reason! .....  We need some bartenders to answer this one! ......also, tell us what order to put liqueurs in to make the colored layers........
