  1. A generator produces only what is being used (aside from its internal power losses). So, when you use 1250watts, the generator is simply supplying you with 1250watts. That 2500 number you mention I presume means the capacity of that generator. That means you cannot use more than 2500watts. I hope this explains what is going on with your generator.

  2. power in watts is equal to the current in amperes times the voltage in volts.  a 2500 watt generator produces a maximum 2500 watts per unit time.  since the voltage must remain constant (or you'll mess up whatever you are powering) you would use half as many amps.

  3. A generator rating is only its capacity to deliver a rated power. If power used is lesser, the generator may operate inefficiently but the extra capacity is not power lost.

  4. The generator only produces the electric power you use [well, plus resistance losses, leakage current power, etc]. If you have a 2500 W gas generator and you only draw 1200 W from it, the engine only provides 1200 W of mechanical power to the generator [well, a little more due to inefficiencies].

  5. the previous answer are correct.  But to take it a step further, the engine will consume less fuel too.  The governor will cut back the throttle on the engine, just like when a car goes down hill, you let the throttle close and reduce fuel intak.
