Ok, what is a good dry rub or wet rub to use when cooking a steak with beer? And how do you make the rub if it needs to marinate or not (obviously not if itsa dry one) Thanx for the help in advance.

  1. salt, pepper and garlic powder.  If it's a good steak, you don't need much of a rub.

  2. i would say when cooking a steak you should use a wet marinade that includes a citrus product so to break down the meat and makes it more tender

  3. I only use a dry rub of coarse salt, coarsely cracked pepper, and crushed red pepper. Wet marinades soak the flavor out of the meat, and if it's so tough you want to try and tenderize it, you're better off braising it.

I'm not sure what you're planning on doing with the beer, but I doubt I'd approve, unless the plan is to drink it. Good meat should be dry-grilled, not basted with liquids.
