  2. Since agriculture began, wheat has been the chief source of bread for Europe and the Middle East. It was introduced into Mexico by the Spaniards c.1520 and into Virginia by English colonists early in the 17th century.

    Though the United States is the third largest wheat producer in the world (behind China and India), large-scale wheat cultivation did not begin in America until the late 1800s. This was because growing conditions for wheat were poor for European settlers who arrived in Eastern North America. It was not until settlement of the central plains of North America that wheat farming took hold.

    Spring wheat, an annual, arrived with the establishment of Spanish missions in the 16th century. Spring wheat is grown in the great plains states. It has a high gluten content which makes it better for bread.

    Winter wheat, a biennial, has a lower gluten content, which means it is better for cakes and cookies. It was introduced to the continent by Russian Mennonites in the 19th century. It is the wheat most commonly grown in the great lakes states.
