Question:

When do I pick my corn??

I have been reading different websites and some say to pick my corn when the liquid in the kernels is milky and some say when it is translucent. So which is the right answer?

  1. When the silks start to turn brown.  Peel back a little bit of the husk to expose the kernel, when you stab the kernel with you fingernail it should "pop" with juiciness.


  2. when the silks sticking out of the end turn brown, the corn should be ready

  3. when the juice is milky it's too late , the sugar is turning to starch  . pick when the silk turns brown and cook promptly .

  4. You can take a bite of it.  Seriously, if it tastes good raw it will taste good cooked.  When the kernel is tender and you poke your thumbnail in the milk should be slightly cloudy.  When the corn is immature the liquid will be clear, turning milky as it ages.  The sweetest, most tender stage is when the juice is slightly white (midway through the change to mature).
