When do bananas stop releasing ethylene gas?

I'm doing an experiment where I test which bananas ripen faster in different conditions...such as in a paper bag with and without holes, plastic bag with and without holes, styrofoam netting, and plastic netting...

the thing is... for me it is hard to obtain green bananas..I was lucky enough to get them but it took about one month for them to ripen!!! [dont quite understand either] ...I need to do 3 trials and i know i wont be able to do it in time.

i was wondering if it would work if i change my experiment so that i get yellow bananas and see which one changes to black first..is this okay?

  1. Normally in these experiments the time is based on however long the bananas take to ripen (about 10 days, not a month. Your bananas have been too green I`m afraid.).

This site contains experiments, ripening tips, ethylene FAQs etc:

    Here a banana color chart:

and more info incl how to use it/what colors stand for:

Hope it can solve your problem!

Otherwise, knowing the results you could ask in a shop for bananas in several degrees of ripeness and start your experiment quasi in the middle to save time.
