When does 24 hour restaurants/diners find the time to clean their cooking equipments?

  1. i agree with the lady above me on down time... they also do it before shift changes there suppose to have there area clean for the next chef.  


  2. I want to agree with bubbles, ivy, and cabella.

    Because even if its 24 hours open there are lots of down hours of the day... like early morning., after midnight when people just love to drink after midnight than  dine.  

  3. I work in the food industry. Most places have more than one type of equipment (ovens, fryers etc.) so they just switch off cleaning them when times are slow.

  5. I've never worked in a  restaurant so this question really got me thinking! Good question..

    Maybe they clean after midnight when business is much slower. If a customer comes in they may have to wait a bit longer for their food since the equipment is being cleaned. This is just my guess...
