When does maple syrup season start?

I don't know if it is different for different areas, but I live in Ma and I love maple syrup. This is my favorite time of the year. So I was just curious as to when it starts and how long it will be, because I heard it will be a short one this year.

  1. Here in Southern Ontario we started harvest a week ago, but the run is still short period each day because we are not above 0C much of the day.

    The season ends when we stop getting freezing nights. That is usually by April 20, some years earlier.

    Ontario also has birch syrup, a somewhat nicer tasting product than maple, and may produce more on a hectare, but less from a single tree.

Sometime in February or March, when the days turn warm and the nights remain cold, the sap in Maine's thousands of sugar maple trees begins its journey from the roots, up through the trunk, and out to the ends of the branches, where it nourishes the buds before making the return trip back to the roots each day during the four to six week maple syrup season.

    When the sap is about to run, sugar makers tap holes two to three inches deep into the maple trees, carefully avoiding old tap holes that are healing over. They immediately place a spout in the tap hole and connect tubing to each tap.

    The fourth Sunday in march is Maple Syrup Sunday, and usually marks the end of the season.
