I take you have a standard transmission?If you have a hand operated parking brake use it to hold the car.When it's time to go start releasing the clutch til you feel it grab then release the brake and go.

it depends on the type of transmission you have.  even some automatic transmissions will roll.  try practicing with someone you know in a car behind on how to stabilize your car and come off the brakes.  i know how you feel.
