  1. If the split looks fresh, they are being cut while you dig them.  Dig farther away from the plant.

If the splits look somewhat healed, it is caused by uneven watering.  In other words, they went through a dry spell followed by heavy rain.

  2. If you are cutting them with your shovel there will be juice and the flesh of the potato will be fresh.  If the split is dry and callused over then it is a growth crack and it is not exactly understood what causes it.  The accepted theory is that while the tuber was growing, the growing conditions changed from poor to good, causing an increase in the rate the potato grew.  Excess water is another possibility.  They do know that some varieties are more susceptible than others.  Leaving them in the ground too long is not a factor.

  3. Perhaps the potatoes are over grown and they split ,or you had too much rain ,or when you dig them up you hit them, don't use a spade use a pitch fork instead. this way they are dirt free when they come up and you only have holes if you poke  them by mistake.

  4. You could be hitting them, or when they grow so big if they keep growing they start to split it is natural for them to.

  5. Are you hitting them with the spade when you dig them?
