I live in Las Vegas and don't know when my limes are ready to pick. How long after they flower do I pick them? Should they be very round or are they more oval?

  1. Go by size until you know your lime and then by experience. They should be  round. Bears lime is larger and should be left on the tree a little longer to sweeten up, than you Mexican/Key Lime which you want a little bitter for cooking and Margarita.

If it's a young tree, pick your Mexican lime at about  1"-1 1/4., your bears at about  1 1/2"

Then try them and see how you like them and whether you want tlo let them go a little longer.
