When is my pepperoncini plant ripe enough to pick?

I planted a pepperoncini plant (chili pepperoncini) in a large pot this year. It is my first time with these peppers. Some peppers on this plant have already grown (largest pepper is about 6 inches long). When do I know when to pick them off the plant? We had a late season this year, so everything is producing late. I just dont want to pick to early. Does it turn red, or does it stay a light green?

  1. Usually picked and pickled in the yellow stage, it holds its color and flavor well when processed.
