When leaving a tip at a sushi restaurant, when sitting at the sushi bar who gets the tip?

Does the waiter/waitress or the sushi chef get the tip? Do they split it? I went to a sushi bar last night and they didnt have a tip jar out for the sushi chef like most places do. So how does the tipping work with or without a tip jar for the sushi chef?

  2. I used to work in an upscale Japanese restaurant and sushi bar and all tips were pooled.  The sushi chefs got 40% of the tips and the busboys got 10%.  The remaining 50% was divided amongst the servers.

  4. Should be the sushi chef maybe a little something to the waitress who brings you beer.  Key thing the chef can not touch the money.  Sanitary reasons of dealing with fish.

  5. at many sushi bars.. there's generally different servers for both the bar and the rest of the restaurant.

    other than that the chefs can get 10% to as much as 55% of the servers tips. When dining out the standard tip is 15%.. but when at a sushi bar it's not full service exactly, the servers don't do as much work if any at all. the standard tip for partial service is 10% but many still do 15%.
