  1. I replace all my recipes that call for shortening with butter...butter just taste better....


  2. Yes, also to make it better for you (and I swear no one can tell taste wise) use 1/2 butter, 1/2 applesauce for the amount of shortening it calls for.  Very moist and good!  You can also use some whole wheat flour (I normally do 1/3 whole wheat, 2/3 white) and sneak that in!

  3. Yes, but use stick margarine or real butter - soft spreads just don't work as well.  

  4. Yes, in fact my recipe calls for butter instead of shortening. For an added flavor, try adding 1 c. of peanut butter chips. I just made some banana bread yesterday and tried that. Super yummy!

  7. certainly!  If it calls for whipping the shortening w/ the sugar, do that w/ the butter -- don't melt it.

    here is a recipe of banana nut bread using butter

    2 cups all-purpose flour

    3/4 cup sugar

    1/2 cup {1 stick} Land O Lakes? Butter -- softened

    2 eggs

    1 teaspoon baking soda

    1/2 teaspoon salt

    1 tablespoon grated orange zest

    1 teaspoon vanilla extract

    1 cup mashed ripe bananas -- {2 medium bananas}

    1/4 cup orange juice

    1 cup flaked coconut

    1 jar {3 1/2 oz.} coarsely chopped Macadamia

    nuts or walnuts

    1. Heat the oven to 350 degrees.

    2. In a large mixer bowl, combine the flour, sugar, butter, eggs, baking soda,

    salt, orange zest, and vanilla. Beat at low speed, scraping the bowl often,

    until well mixed, 2 to 3 minutes. Add the bananas and orange juice. Continue

    beating, scraping the bowl often, until well mixed, 1 minute. By hand, stir in

    the coconut and nuts. {Batter will be thick.}

    3. Spread into three greased 5 1/2 x 3-inch mini loaf pans or one greased 9 x

    5-inch loaf pan. Bake the mini loaves for 35 to 45 minutes or the 9 x 5-inch

    loaf for 60 to 65 minutes or until a toothpick inserted in the center comes

    out clean. Cool 10 minutes. Remove from the pan{s}. Slice and serve.

    Makes three 5 1/2 x 3-inch mini loaves or one 9 x 5-inch loaf.
