  1. Make sure the mix is not too dry and that there isn't air bubbles trapped in the balls.


  2. The dough has to be kneaded well until it's smooth.  When it stays out for a while, it will dry up quickly, so you may have to knead it again with more milk.

  3. Add a small amount more of ricotta cheese. It adds a wonderful flavour, and should prevent the cracks. Also, make sure that there are no air bubbles.

  4. The problem is with the mix. It has to be of the right consistency. Yours probably may be too dry. It shouldn't be too sticky either. The mixture shouldn't stick to your hands. Also try making small gulab jamuns.
