When making jalapeno jelly it comes out smelling @ tasting like vinegar?

Too much vinegar and not enough jalapeno.

Use way more peppers than the recipe calls for and strain and squeeze all the good stuff out with cheese cloth.

Couple cloves of garlic helps too.

A dash of cayenne for good luck and a couple small dried red chili's in the jar for s*x appeal.

Hi, I make this also and just love it served with cream cheese and crackers.

It sounds to be like there is not enough sugar in your batch. Maybe double check to make sure you did add the correct amount.

Or, google some more recipes for comparision purposes on the amount of sugar.
