  1. If you simmer it, yes. The traditional method is to stick a hot poker into the wine. The ash actually improves the taste of an acidic wine.


  2. I don't think it matters. It only needs warming through, not boiling. It will heat quicker with a lid on, bu it doesn't take long anyway.
