  2. Yes, meat was preserved this way for thousands of years.

    If you can buy a smoker, they come with all the info on smoking you need. If you can't afford one, you can use a kettle style BBQ grill.

    Get a good thick bed of glowing coals-push them to the sides to form a hole in the middle. Place a metal pan of water in the hole-disposable aluminum ones work just fine. Put chunks of your smoking wood that have soaked in water for at least 30 minutes scattered over the coals. Set the grill rack as high as it will go. Place meat as much as possible over water pan. Close lid-close vents almost all the way, leaving just enough ventilation to keep the fire going. It will take 6-8 hours for a large ham or turkey-be sure to test with a meat thermometer that it's fully cooked. We have finished cooking a big piece of meat in the oven with good results. A whole salmon will take only an hour-cheese takes 15-30 minutes (put cheese on a piece of foil and don't use as hot a fire). Any hardwood can be used for smoking-do not use resinous wood like cedar or pine. Fruit woods, hickory and mesquite are particularly good. Watch your fire and if smoking for a long time add more wood periodically.

  5. it helps meat to preserve, if the meat is well dry but it's as all preservation method a temporary matter.

  6. I think you are getting mixed up with the word 'preserved'. Preservative is a jam or marmalade. Sorry, don't know any sites, just google it .

  8. Smoking the meat properly does help it last longer without refrigeration, but the bigger benefit is that it can taste better-- depending on which wood you use to create the smoke. (I don't care for hickory, but alder, maple, or fruit woods can be nice )
