When opening a new restaurant, what is more important, mass appeal or niche appeal?

  1. mass apeal but it has to have its own niche. like a bbq place with a twist. i dunno


  2. I think it depends on the size of the population of  the city where you plan on opening it. I know of a restaurant  in New York where all they have on the menu is macaroni cheese. In a  city like New York  you could get away with opening  a restaurant  with niche appeal  like that but in my home town (population  just over  six hundred thousand)  you would just be throwing money away, the niche would be too small.

  3. well mate i'd rather serve lots of good fresh food to the masses/ local people rather than serve to a niche market it opens up a lot more oportunities to expand your market without changing your original concept. staycool
