Question:

When ordering Sushi, is it ok to ask for brown rice to be used instead of white?

Usual thing, love sushi, but always on the lookout for healthy alternative.

  1. Yes, but the seaweed has to be rolled on the outside.  Even then it doesn't make foir ideal sushi because it does not taste well with sushi vinegar. Brown rice is par-boiled (not raw like short-grain sushi rice) thus does not get sticky unless extra water is added.  Extra water added does however mean mushier rice.  You are correct for percieving brown rice as being much healthier because it is whole grain and has more beneficial germ & fiber.  White rice is made healthy by adding enrichments (required by law) but most nutrients are lost in the washing process.  Make it easy on your chef & ask him for a side of brown rice with assorted sashimi.  Message me if you would like more sushi secrets.

  3. Sushi is made with a special glutinous rice that helps the whole thing stick together. I don't think brown rice will work because it's not sticky enough. Also considering the low levels of heart disease in Japan, I think their national dish is already pretty healthy.

Unfortunately, brown rice can NOT be used to make sushi.  You have to have the 'short grain sticky' rice for it to come out the way it does, and that can happen ONLY with white rice, and even then you can't use ALL white rices, just the 'short grain sticky' kind.  I love sushi, too, and I wanted it to be 'healthier' ... and that is what my sushi chef told me (okay, I'm married to him ... and he is a 'retired professional chef' who does all of our cooking).

  6. well it all depends on where you go or live. some places barely have brown rice, in order to make the sushii stick you have to use the sticky kind if rice too. so you may ask or call them and see if they could. well i hope this helps!

  7. I don't know where you live, but Wegmans, located in the East, sells brown rice sushi.

    If the sushi is made-to-order and chefs have brown rice on hand, I'm sure they would meet your request.

  8. A number of local sushi places near me offer brown rice for their sushi. It doesn't have quite the same texture or taste, obviously, but it can be used - mostly in the rolls, a bit harder to use in single piece sushi.

    Just ask the person taking your order if the chef has brown rice to substitute for the regular sushi rice. If they have it, I'm sure they would be happy to make the switch for you!
