    The line of authorty in French service is somewhat more detailed than American service. Whereas more personnel are involved, each station has specifically defined duties and tasks.

    Maitre d'Hotel: The Maitre d' is solely and completely in charge of the entire dining room operation.

    Chef de Salle (chef de service): Similar to head waiter of American service, the Chef de Salle is in charge of the actual running of the dining room and supervises all dining room staff.

    Chef de Rang: The caption or section manager, the Chef de Rang takes all orders in a particular section, prepares all tableside items in the section, plates all food in the section, and supervises staff in the section.

    Chef de Vin (Sommelier): Wine steward.

    Demi-Chef de Rang: Back up waiter prepares food to be served from the kitchen. Kind like our expiditer.

    Commis de Rang: The front waiter, serves meals to the table and sets the silver for service.

    Commis de Suite: Apprentice to the back waiter.

    Commis Debarrasseur:Apprentice to the front waiter and clears the table. Our busboy but with a flare.

    It is from this service were the wine steward or Sommelier serves the wine always from the right. All beverages are served from the right in formal service. The wine and all beverages bottle is always held in the right hand and served to each guest from their right.   All food is served from the patron's left side with the waiters left hand. The French service is an exception where some house policies require from the right with the right hand.

    This atrtention is rarley seen by us due to the fact we do not dine at 3 Michelin star restaurants. Also in U.S. even at the nicest restaurant we tend to be less formal.

  2. Honestly, it makes no difference what side you serve from. I'm sure there's some guide to service, but I've had wine stewards in excellent restaurants serve on both sides, depending on the position of the table and where the steward can present the bottle most effectively.

    Cointreau is an orange liquor.

    Tequila is made from all blue agave, Mezcal may have some blue and some other agave.

Wine is ALWAYS presented - and served - from the right.  If it is not in a restaurant you are in I would wonder if the sommelier has been properly trained.  The only exception to this rule is if the one who ordered the wine (and no, that is not always the host) is in a tricky position at the table, then it may be done as required for efficiency and safety.

    An easy rule to remember: ALL is served (be it beverage or food) from the right, and all is cleared (except glassware, which is on the right to begin with) from the left.

    Cointreau is a French Triple Sec (i.e. and orange-flavored liqueur).

    Tequila.
