  1. The term is 'stop'. this involves  pinching out the growing tip 2 leaves above the top truss. This concentrates the plants energies into maturing the remaining trusses, before cold weather re- appears. In the north leave 3 trusses, 4 in midlands and 5 in the south. Do this in late July early August'

This answer applies to Great Britain, not to sure about US zones.

  2. Nip out the tops of the plants once you've got a maximum of four trusses (little sets of flowers that turn into tomatoes) on each.  This is to ensure that most of the tomatoes will ripen.

It's also best to take out all the little side-shoots as well.  This allows the main stem of each plant to grow more strongly.

Hope this helps and that you have a good crop.  Our plants are doing well, but all the tomatoes are still green
