Does the time of harvest affect it's hotness? The specie is Thai Pepper, if that helps.

  1. It should be harvested when there's a need for pepper spray.  Ideally, you want to harvest it later to allow it to grow hotter - yes.  But, sometimes you don't have that luxury because there's lots of people out there who need to have pepper spray to defend themselves just in case they're attacked.  So, the harvesting time is dependent on the level of crime.

  2. i dont harvest it , i cook it on the stove with a can of tomato juice . beef.  kidny beans . onions , mmm its delicious

  3. I harvest most of mine green..if you let them go red on the plant it tells the plant it has successfully reproduced then it shuts down most of the production of peppers for the rest of the season..Also you asked about the hotness of the pepper and alot don't know..but  capsicum produces in a pepper the most when it is under "stress"...meaning let the soil dry out good inbetween waterings..do not water every day..here is some info on this..Read under "watering and mulch' on this link..
