When should i pick my peppers?

BEST PICKED WHEN A DARK ORANGE COLOR. YOU DONT WANT IT TO BE A DARK RED RIGHT AWAY, AND YOU DONT WANT IT TO BE GREEN OR LIGHT ORANGE

if you are picking for seeds then it is best to pick when the peppers have ripened and take the seeds from them for next years planting...otherwise, I have picked my hot peppers whenever I had a need for them....and dried or brined the others

Big or small, hot peppers can be picked anytime in my opinion.

Plains:  I would not pick my pepper until they feel hard, they will  get shinny and dark green.
