  1. Tete de veau (calf's head) is regarded as a great delicacy in France. I have never seen it in a US restaurant, though.

    An animal sold for slaughter is weighed before it is killed not after. that's why it is stupid to let an animal starve before being killed. thin animals don't get a good price.

  6. animals are bought and sold by weight, so not using every part for something would be a waste of money.  the head will go somewhere, as will the heart, brains, liver, tongue, etc......

  8. hope you know veal isent just a calf they kill.they make veal by puting them into tinny boxes so they cant grow or move then after leting them suffer a month or two then yea they cut off the head
