When you boil lentils, do any protein or nutrients remain in the water?

  1. Only water-soluble vitamins will be lost in the water. Not any protein counts. Water soluble vitamins are B-complex vitamins, Vitamin C and H. In Lentils the only water-soluble vitamin is vitamin C, which has a marginal content in lentils. Therefore in the water, there will be a slight amount of vitamin C, that should be it though.

    Also the starch/sugar (whatever you choose to call it) also comes out to a certain degree.  This is what caused gas (flatulence) and why many kinds of legumes and beans need to be presoaked and drained a number of times before cooking. Unless there's an easier method I'm unaware of.
